November Harvest Turkey & Sweet Potato Skillet with Autumn Greens

As November crispness sets in and we transition into the busy holiday season, keeping meal prep simple, nourishing, and energy-sustaining is essential. When schedule demands pick up, turning to warm, one-pan batch meals allows you to fuel your body without spending hours in the kitchen or feeling heavy and sluggish afterward.

This November Harvest Skillet pairs clean ground turkey with nutrient-rich sweet potatoes, tender autumn greens, and fragrant herbs. Sweet potatoes provide a slow-burning source of complex carbohydrates to keep your energy and blood sugar stable throughout the day, while lean turkey delivers the essential amino acids needed for muscle recovery and joint stability. Fresh kale or spinach adds a boost of magnesium and key vitamins to help keep systemic inflammation low and connective tissues resilient.

Ingredients:

  • 1.5 lbs ground turkey (or ground chicken/bison)

  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

  • 1 tbsp extra virgin olive oil or avocado oil

  • 1 medium yellow onion, diced

  • 3 cloves garlic, minced

  • 3 cups fresh kale or baby spinach, chopped

  • 1 tsp dried sage

  • 1 tsp dried thyme

  • 1/2 tsp sea salt & black pepper to taste

  • Optional Dairy-Free Topping: 2 tbsp nutritional yeast or toasted pumpkin seeds (pepitas) for a rich, savory crunch.

Instructions:

  1. Sauté the Base: Heat olive oil in a large skillet over medium heat. Add diced onion and sweet potatoes. Cover and cook for 8–10 minutes, stirring occasionally, until sweet potatoes begin to soften.

  2. Brown the Protein: Move the sweet potatoes to one side of the skillet, add the minced garlic and ground turkey, and break it up with a wooden spoon. Cook until turkey is fully browned and cooked through (6–8 minutes).

  3. Season & Combine: Stir in the sage, thyme, sea salt, and black pepper, mixing the turkey and sweet potatoes together.

  4. Wilt the Greens: Fold in the chopped kale or spinach and cover for 2 minutes until greens are vibrant and gently wilted.

  5. Serve & Enjoy: Top with nutritional yeast or pumpkin seeds for extra flavor. Divide into glass storage containers for quick, warm meal-prep lunches throughout the week!
